2 potatoes
6 brinjals (eggplants)
1/2 cup coconut
6 dry red chillies
1/2 onion
1 tsp coriander seeds
1/2 tsp mustard seeds
1/4 tsp cumin seeds
1 garlic clove
1 tsp tamarind
1 tbsp sugar
4 curry leaves
Grind all masala ingredients into a fine paste
Cut potatoes into large pieces. Make four longitudinal slits for each brinjal. Stuff some masala into each brinjal. Heat 2 tsp oil and add mustard and curry leaves. Add potatoes, brinjals and masala. Add water to make thick gravy. Add salt and sugar. Let it cook on a slow flame by covering the vessel.
