Ingredients
1/2-1 cup either brinjal (eggplant), red pumpkin, drumstick or potato - optional
1/2 cup toor dal
1 tsp sugar
Salt to taste
For masala
4 tsp coconut
4 dry red chillies
1/4 cup coriander seeds
2 peppercorns
1 tsp toor dal
1 tsp udad dal
1 tsp chana dal
1 tsp hing (asafoetida)
4 curry leaves
1/8 tsp cumin seeds
5 methi (fenugreek) seeds
1/2 tsp tamarind
1 tsp oil
For garnish
1/4 tsp mustard
2-3 curry leaves
1/2 tsp oil
Instructions
Fry ingredients for masala in oil until coconut starts turning brown, grind to fine powder (dry)
Cut vegetables, add toor dal and vegetables into a pressure cooker with 1 cup water
Cook on high flame until 1 whistle. Turn off flame, when cooled, open the cooker
Add masala, salt and sugar. Add water to adjust thickness and cook for a few minutes.
Heat oil, add mustard and curry leaves when hot and add as garnish
